Holiday Leftovers

If many of you are like me, your refrigerator is a sea of leftovers waiting for you to take the plunge. The other night I took a good hard look in my fridge and came up with a delicious hodgepodge of hammy eggy goodness and used every last bit of my leftovers. I combined the roasted potatoes, ham and load of kale with sauted onions in a casserole dish and poured a combination of eggs, the extra butter poaching liquid and a bit of milk over the top and added the last bits of some cheddar cheese. I baked it until the cheese was bordering on crispy and the eggs were set. The combination was to die for.

I would have had Phil take a picture, but I didn’t think it was going to be that good.

Moral of the story: Don’t give up on all of those leftovers just yet! Take a look and use your imagination, you can give them a new life far from the skid row that is the back of your refrigerator and save yourself a bit of money while you are at it!

    Ah leftovers, how wonderful they are. Our chicken got turned into a pilau with green beans, mushrooms, courgettes and onions as well as the chicken.

    That photo had me fooled for a moment. There I was thinking what a lovely carnation it was… until I saw the leaves and realised it was a cabbage! A beautiful picture tho’.

    I am sure the picture would have looked great, maybe steaming hot on a plate with some greens with it.

    Have a goodly new year with few and little troubles. Despite the recession (sigh).
